St Patrick’s Day is tomorrow.  A day of luck. A day of green. A day of leprechauns. It is also a special day in our household. It’s my husband’s birthday.  Our house has been blessed with a pot of gold – my husband.

Fun Fact:

St Patrick – as explained in last year’s blog – bridged the gap between pagans and Christians.  Leprechauns are often associated with St Patrick’s Day due to wearing green. It has been said that wearing green made yourself invisible to leprechauns (who would pinch anyone they would see because they are cranky tricksters).  Fairies would pay leprechauns gold coins who would then hide in pots. Legend says that if you caught a leprechaun, you could force him to reveal where his pot of gold was. 

My husband is our Pot of Gold.  Why you ask:

  • He is full of faith
  • He is full of love
  • He is full of life
  • He is full of adventure
  • He is full of commitment
  • He is full fo charity for others

He would drop everything for his family and for that, I love to honour him whenever I can.  One way I honour him is to make him his favourite cookies.  Sounds simple… I know… But!  He loves them.  And he knows he is special when I make them because I don’t like raisins.  I am making them specifically for him.  Just because I love him.  

Oatmeal Raisin Cookies:

  • 3/4 cup butter or margerine – softened
  • 3/4 cup white sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 cup all purpose flour
  • 1 tsp baking soda
  • 3/4 tsp ground cinnamon (optional)
  • 1/2 tsp salt
  • 2 3/4 cups rolled oats
  • 1 cup raisins (I put a bit of extra in – approx another 1/4 cup)

Preheat oven to 375 degreens F. In large bowl, cream together margerine/butter, white sugar and brown sugar until smooth. Beat in eggs and vanilla until fluffy. In a smaller bowl, stir together flour, baking soda, cinnamon and salt. Gradually beat into ‘wet’ mixture. Stir in oats and raisins. Drop by teaspoonfuls onto ungreased cookie sheets (I use parchment paper).

Bake 8-10 minutes (or until golden brown – sometimes mine are in the oven for close to 12 minutes depending on size of the cookies). Cool slightly, remove from sheet onto wire rack and cool completely.
