Grab And Go Breakfast
Do you take the time to properly nourish your body? Plan out meals ahead of time? Eat in a peaceful setting? Or, are you the type to be staring in the fridge wondering what you should eat? Only to grab a banana or a piece of toast as you walk out the door? If this is you, you are in luck! Here are a few easy grab and go breakfast ideas that are not only easy to prepare, but are also full of protein and goodness.

My week varies from day to day. Some mornings, I am home and able to make a healthy breakfast and other days, I am at work before 6:30 am. Those latter mornings do make it more difficult to properly eat.
Over the years, I have come to develop the habit of using Sunday’s as a meal prep day. I sit down and plan out the week’s dinner menu and my grocery list. I also prep fruit so it is on hand, make energy bites for fast protein, and often have a variety of breakfast items created for those grab and go mornings.

My go-to breakfast items:
- Fruit
- Hard boiled eggs
- Bite size energy bites
- Egg bites
- Smoothies
- Overnight oats
- Dairy free yogurt
Each of these items are simple to make – simple to store – and simple to grab and go.
Delicious Egg Bites
Ingredients:
- 6-7 eggs
- Dairy free milk
- Peppers – chopped
- Ham or bacon – chopped
- Optional: asparagus – chopped
Directions: Spray a muffin tin with a non-stick spray. Spoon in desired ingredients into each cup. Crack and beat eggs until smooth and pour into each cup. Sprinkle with salt/pepper if desired. Bake for 20 min at 420 deg. Let sit for 5 min before removing from tray and store in sealed container in fridge for up to 5 days.
Overnight Oats
Ingredients:
- Gluten free oats
- Dairy free milk
- Berries
- Granola
- Optional: brown sugar
Directions: Put a 1/2 cup of oats in a jar, fill with milk and add brown sugar if desired for a sweetener. Top with granola and berries. Let sit overnight. Can be eaten cold or warmed up in microwave.
If you search the internet world, you may find many variations of these recipes to alter your tastes and desires. Enjoy the process and the ability to be creative with your options. It not only makes each week different, but it allows for your creative side to come out (which in turn can allow calm and peace to enter your soul. That’s a whole other blog through).
