Bite-Size Energy Bites
These bite-size energy bites are a combination of a granola type snack yet packed with nutrition. Most items are already in your cupboard so a trip to the grocery store may not be necessary. I tend to make these on the weekend as part of my weekly food prep routine. Easy to do with the added bonus of being no-bake means even your little one can help in the kitchen.
Simple ingredients that can be substituted for what is in your cupboard as well. I am not a huge coconut fan, so I use ground banana chips instead. If you LOVE coconut – then this would be an option for you. OR…. as an alternative to different ENERGY BITE flavours.
Start by mixing the ingredients in a bowl. It can get sticky (with the use of honey), so you may need to use those hands to mix thoroughly. Once you have them nicely mixed, start rolling the balls with your hands. Make each ball about an inch in diameter and place in an airtight container for storage. I find they last in the refrigerator for about 3 weeks until they start to loose their freshness (but it is not very often that they last that long in there. They tend to get eaten quite quickly).
My family devours these as healthy snacks, quick on the go mornings, sporting event protein pops, or simply as a dessert alternative. Be creative and substitute chocolate chips for nuts or ground banana chips for coconut. Enjoy with an afternoon tea laughing with your girlfriends or providing energy to your child’s sporting team (or in my case… supplying my teenaged son with the daily protein his body is craving) – you won’t be disappointed with these delicious energy bites. Recipe
- Prep Time: 10 minutes Total Time: 20 minutes
- Ingredients:
- 1/2 cup Peanut Butter
- 1/3 cup Honey
- 1 tsp Vanilla Extract
- 1 cup oats
- 1/2 cup Ground Banana Chips
- 1/2 cup Ground Flax Seed
- 6 Tbsp Mini Chocolate Chips
- Directions: In a mixing bowl, add all ingredients. Mix together with a spoon until completely mixed together. You may need to use your hands because the honey can make the mixture sticky. Once completely mixed, roll into 1 inch balls. Store in refrigerator in an airtight container. (recipe adapted from Smashed Peas and Carrots)
