Simple Go-To Cottage Meals

Cottage The place where the best memories are made

Do you have a cottage? Do you rent a cottage during the summer months?  Or, do you visit family or friends at their cottage?  Regardless which of the above options is you – you must have a ‘Go To’ Cottage meal.  

Going to the cottage is supposed to be relaxing, stress free, fun and peaceful.  If it isn’t, you’re going about this all the wrong way.  Planning is key to a super relaxed weekend at the cottage.  I spend Monday to Wednesday planning out my weekend cottage meals.  

Where do I find new or different meal ideas?  Pinterest is a staple in my meal search or allrecipes.com.  There are so many varieties of salads, BBQ recipes, desserts or snacks to chose from.  And, if you are anything like me, I can totally get distracted clicking from picture to related picture finding even more scrumptious eats. 

Tips

  • Plan
  • Search the internet for AWESOME recipes.
  • Don’t overshop or overcook. Carefully plan out each meal so no food goes to waste.
  • Create a file for ‘Cottage Recipes’ for future vacations.
  • Always have something in the freezer that you can pull out to BBQ in the event of a cottage drop-by.

I have put together a few of my favourite Cottage Go-To Meals.  I make these quite frequently and almost always when company is coming.  

Breakfast:

Bacon on the BBQ.  Nothing smells better than bacon cooking on the BBQ first thing in the morning. It is bound to wake even the sleepiest of guests.  Double foil some Tin Foil into a tray type fashion.  Two layers is key so it does not burn.Lay out the bacon in strips.  (Tip: I cut the pack in half to make the strips smaller) overlapping ever so slightly. Cook over low heat, turning frequently to prevent burning.  

Lunch:

Salads.  I always have a macaroni salad of some sort in the fridge.  This salad is made with Tuna, so it is also packed with protein.  Great for lunch, dinner, or even a snack. See recipe below:

Macaroni Salad Recipe: *2-3 cups of elbow macaroni – boil until tender *1 can of flaked tuna in water *Miracle Whip or Mayonnaise *Chopped carrots *Chopped celery *Salt and pepper to taste *Paprika to sprinkle on top *Mix everything in a bowl and top with Paprika

Dinner:

Salmon cooked in foil packet.  Purchase salmon with skin removed and let marinade in sauce (click HERE for marinade) for at least 30 minutes.  Place in foil packet and cook for 15 minutes or until flakey and done.  Delicious, and not long to cook. Serve with left over salads or corn on the cob.  

Dessert:

These squares are to die for.  They are a no bake, easy to do, perfect for any occasion square that you and your guests will LOVE.  I am often making these weekly during the summer months due to how delicious they are.  

Sweet Marie Squares Recipe: *1/2 cup honey *1 Tbsp butter or margarine *1/2 cut brown sugar *1/2 cup smooth peanut butter *1/2 cup chocolate chips *3/4 cup chopped nuts *2 cups Rice Krispies cereal TOPPING: 2 Tbsp smooth peanut butter 1 cup chocolate chips. DIRECTIONS: In sauce pan, heat up honey, peanut butter, butter, brown sugar, and chocolate chips. Remove from heat, stir in nuts and cereal.  Press in lightly buttered 8 inch baking dish.  For Topping; melt the peanut butter and chocolate chips until smooth and melted and spread over base. Refrigerate until firm and cut into squares.  

There are so many varieties of breakfast, lunch or dinner meal ideas.  The fun part is that you get to choose.  Right now, as I am sitting down to write this, I just completed prepping for the cottage this weekend.  We are having friends come for a visit, so I prepped 3 salads, washed lettuce (2 kinds – one for Caesar salad and one for burgers/sandwiches), washed fruit, cut up veggies for shish kabobs and BBQ roasted veggies, and cut up those yummy squares.  I was an assembly line in full action mode – with the help of my lovely daughter.
