Peanut Butter Treats

It’s that time again! Christmas baking time. Are you a chocolate nut?  Or a peanut butter fanatic?  Or, the double whammy of loving the combo together?  I love both chocolate and peanut butter and when I found this recipe of both delicious treats combined into one delectable bite, well… they immediately had to be made. These peanut butter bites were a definite hit in my household and are a perfect treat to incorporate into your Christmas baking.

I love finding new recipes and especially recipes that I believe will be a hit in my home.  I think each member of my family loves Reese’s Peanut Butter Cups and these delicious peanut butter bites are like tasty twin to that fabulous candy.  

Peanut Butter Bites – Recipe

Ingredients:

Chocolate Layer (Bottom)

  • 9.5 oz dark chocolate (depending on amount of chocolate you like, you may want more)
  • 2 Tbsp coconut oil (you can use vegetable oil as well)

Peanut Butter Layer

  • ½ cup smooth peanut butter
  • 1 Tbsp oil
  • ¼ cup sugar
  • 2 Tbsp flour
  • ½ tsp vanilla

Directions:

Line muffin trays with muffin paper liners.

Melt chocolate with oil in microwave safe bowl in increments to avoid burning.  Or melt over double boiler – stir frequently.

Pour 1 Tbsp of melted chocolate into each paper liner.

Place tray in freezer 8-10 minutes until firm.

Set aside remaining melted chocolate for top layer.

While the chocolate is in the freezer – in another microwave safe bowl – combine peanut butter and oil. Melt in increments until smooth and even.

Stir in sugar, vanilla and flour and mix until forms a slightly thick mixture.

Remove tray from freezer and add 2 Tbsp of PB into each chocolate paper cup.  

Freeze again for 10-12 minutes.

For the top layer, remelt remaining chocolate if necessary

Remove tray from freezer and spread 2 tsp of chocolate onto PB layer

Place tray back in freeze for one last time 8-10 minutes

Remove and enjoy

Tip:  The first time I made them, I used full size paper cups.  They were delicious but the second time, I used mini paper cups and not only did I make more of them, but they were just perfect in size to satisfy my crave.

These Peanut Butter Bites are simple to make and will have your family or guests raving about them.  They are also a ‘no-bake’ quick recipe so if you have small children who are keen to learn how to bake, this is a perfect option for them to try.  They last about a week in the fridge – but I’d wager that they will be devoured within days of your family enjoying that first bite.
