Peanut Butter Perfection
Have you ever fell upon a recipe that you just cannot wait to try out? I certainly have! One that I recently discovered (On National Peanut Butter Day no less), were these scrumptious, mouthwatering peanut butter perfection cookies.

This recipe came across my Facebook feed in March due to National Peanut Butter Day. I follow Tasty Vegetarian – which has many delicious recipes. I have tried plenty of delicous recipes from there website. If you aren’t following them, you definitely should.
I must note that not all of their recipes are strickly vegetarian. They often have butter or a dairy feature of some sort. I just simply modify it to be dairy free if necessary.
Peanut Butter Cup Cookies
- 1/2 cup butter or margarine melted (I use margarine and I find I require 3/4 cup for my liking)
- 2/3 cup brown sugar
- 1 egg
- 1/3 cup peanut butter
- 1 tsp vanilla
- 1 cup flour (if using margarine or for less dry cookies, use 3/4 cup flour)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup mini peanut butter cups
Stir until well blended and chill for 1 hour. Once chilled, drop spoonfuls onto parchment paper lined pans. Bake at 350 degrees for 8-10 minutes.
Note: I have had to play around with this recipe due to making it dairy-free. It sometimes requires more margarine or less flour. You may need to as well depending on which recipe option you choose. The cookies on the left have less margarine and more flour and the cookies on the right have more margarine and less flour.
All in all, these cookies were a hit with my family. Peanut butter yumminess with chunks of mini peanut butter cups make a mouthwatering after-dinner sweet (or mid-day snack).
